Yeah… If you are looking for one of the most indulgent recipes I have ever created, this might be it. This recipe should probably be saved for special occasions only! The warm waffles, the melting maple pecan ice cream, the chocolate maple sauce smothered all over… I am going into a food coma just thinking about it! This recipe features Nadamoo!’s Mmm… Maple Pecan coconut milk based ice cream. Yes, that means it’s vegan and yes, it’s the best non-dairy ice cream I have ever had! If your grocery store doesn’t carry it, I highly suggest put in a request for this stuff!
Mmm… Maple Pecan Ice Cream & Waffles with Chocolate Maple Sauce
Maple Chocolate Sauce:
1/4 cup cocoa powder
1/4 cup maple syrup
2 Tbsp. plain almond milk
1/2 tsp. pure vanilla extract
Waffles:
2 cups gluten free all-purpose flour (or regular)
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups almond milk
1/2 cup (1 stick) Earth Balance butter, melted and cooled
2 bananas, smashed
1 TBSP. vanilla extract
Ice Cream:
1 pint of Nadamoo! Mmm… Maple Pecan
What you’ll do:
Maple Chocolate Sauce:
For the chocolate sauce, whisk together all the ingredients in a small pot and heat until smooth. Set aside.
Waffles:
In a medium bowl, whisk together all the dry ingredients.
In a larger bowl, whisk together all the wet ingredients. Pour the dry into the wet and mix softly. You don’t want to over mix waffle mix. You want it to be pretty lumpy.
Pour into your waffle maker and make to their instructions.
To serve, place two waffles stacked on the diagonal, top with two scoops of ice cream and a big drizzle of chocolate sauce. Enjoy!!
