I love making this salad and I really want to share the recipe with you! I made it the other day for lunch at my girlfriends house. She was doing a photoshoot for her new skincare line. Be on the lookout for LANIMA beauty! It’s the most beautiful line of clean skincare! Ok, here’s the recipe, more on skincare later 🙂
Mexican Caesar Salad
1 head of romaine, chopped
1 buch of lacinto kale, chopped
1/2 cup cilantro, roughly chopped
1 pint cherry tomatoes, halved
1/3 cup toasted pepitas (sunflower seeds)
1/3 cup sliced green onions
2 avocados, diced
3/4 cup diced jicama
1/2 cup crispy tortilla strips, optional
dressing:
1/2 cup raw cashews, soaked overnight
1/4 cup water
2 tbsp. olive oil
1 tbsp. lemon juice
1 tbsp. whole grain mustard
1 clove garlic
1/2 tsp vegan Worcestershire sauce
2 tsp. capers
1/4 fresh jalapeno (more or less to adjust to your spice level)
salt and pepper to taste
Puree all dressing ingredients in a powerful blender until smooth.
Place all the salad ingredients in a big bowl and toss with dressing.
