Sundays are meant for sleeping in and making pancakes, am I right? After many years, this is my favorite way to make them. The blueberries can easily be subbed out for your favorite fruit, nut, chocolate chip, or nothing 🙂
Leslie’s Famous Blueberry Banana Pancakes
Makes 8 large pancakes
What you’ll need:
1 1/2 cups whole wheat flour or all purpose
3 1/2 tsp. baking powder
1/4 tsp. sea salt
1 tbsp. brown sugar
1 cup almond milk
1 large ripe banana smashed
3 tbsp. melted coconut oil
2 tsp. vanilla Extract
2 tsp. cinnamon (optional)
dash of nutmeg
a handful of fresh or frozen blueberries
What you’ll do:
Sift together the flour and baking powder and gently mix with the sugar, cinnamon, nutmeg, and salt in a big bowl. Make a well in the center of the flour mix. Add in the almond milk, banana, melted coconut oil, and vanilla. Mix. The batter should be slightly lumpy. If it’s still too thick, add a little water. In a heated pan, sprayed with coconut oil and drop large dollops of batter in the pan. Arrange your blueberries on the pancake. Cook on 2-3 minutes on each side or until golden brown. Enjoy with fresh maple syrup.
Tomorrow is my birthday, my husband will cook these pancakes to me. The sunday pancakes will be wednesday pancakes this wekk. xD
