Finding cookies that are vegan, gluten free and don’t taste like cardboard is nearly impossible, which is why I had to figure out a way to do it myself. These cookies don’t use a gluten free flour substitute, there is just no flour in them at all! They are also chewy, moist, and super yummy! Give them a try today!
Chocolate Chip Peanut Butter Cookies (Gluten free and Vegan)
Makes about 2 dozen cookies
What you’ll need:
1 cup creamy peanut butter
1 cup firmly packed light brown sugar
2 tbsp. cornstarch dissolved in 2 tbsp. water
1 tsp baking soda
½ cup extra dark chocolate chips
What you’ll do:
Preheat oven to 350 degrees.
Mix all ingredients except chocolate chips. When blended, fold in the chocolate chips. Form 1 1/2 inch balls and flatten into a pancake shape and place on an un-greased cookie sheet. Bake for 9 minutes. Let the cookies sit on the cookies sheet for about 30 seconds to 1 minute before letting cool on a wire rack.
What a great flourless cookie recipe.
I indulged with plenty of cookies during the holidays and although I don’t want to stop eating cookies, I’d like to make some lightened version of them. I think this fits that category. I have bookmarked it. Hopefully I can make these along with the coconut/chocolate healthy cookies from 101cookbooks.
My first vegan dessert. Easy to make and turned out great. Thanks!
I’m so glad Jennifer!
These look both super easy and super yummy! I will definitely be making them soon 🙂
Wow, these look great! I haven’t used cornstarch as an egg replacer before, so I look forward to trying them!
These cookies look amazing and incredibly simple! I am always on the lookout for a recipe similar to my mom’s chocolate chip cookies…sans the shortening and eggs!
Wow, you can make cookies out of just those ingredients? I never would have guessed. I thought all cookies needed flour. (Can you guess I don’t bake much?) These sound delicious! Thanks for sharing. Pinned so I can make them!
cookies, hummm,
It is much appreciated!
ah without saying that for Valentine’s Day is a good gift, lol
Hi Leslie! This recipe looks delicious, and I can’t wait to try it out! Can you please supply the nutritional information/calories? Thanks!
It would be nice. Especially for those who are in the diet.
This recipe turns out great everytime! It’s nice to find a vegan recipe that has a great taste and texture even without eggs
This recipe I’d like to try.
