Joe's Vegan Ginger CookiesMy cousin is a total catch… Not only is he a genius (no, seriously.), he is a great cook! He made these amazing ginger and molasses cookies over the holidays with fresh spices and they were ah-maze-ing! I don’t often share recipes on here that aren’t mine, but these were too good not to! If you can use fresh ginger, and grind your own nutmeg, cinnamon, and cloves they will be so much tastier than the norm! Ok, here is the recipe:

Joe’s Vegan Ginger Cookies

3/4 cup vegan margarine, softened

1 cup raw or granulated sugar

1/4 cup molasses

2 1/2 cups flour (easily sub out gluten free)

1/3 cup water

1 1/2 teaspoons baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon grated nutmeg

2 tablespoons fresh grated ginger

1/4 teaspoon salt

2 tablespoons sugar

Directions:

In a large bowl, cream together the vegan margarine and 1 cup sugar.

Stir in the molasses.

Add the water and baking soda and stir.

Sift together the flour, salt, and dry spices; add gradually to the sugar-margarine mixture.

Gradually stir the sifted ingredients, along with the ginger into the molasses mixture.

Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar.

Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.

Bake at 350°F for 10-12 minutes.
