Italian Gigante Bean Salad With Christmas just around the corner, I thought I’d give you a light and yummy recipe that you could easily serve as an anitpasti salad, or a side dish to your Italian (or American!) feast!  It features some of my favorite ingredients including gigante beans!  They are a like a lima bean.  If you can find them, feel free to sub with white, garbanzo, or cannelini beans.  This is a great dish to make the day before!  The flavors will only develop as it sits in the fridge 🙂
