Man I love Summer ingredients!! This was kind of a throw together salad that ended up fabulous! So I thought I’d share 😉
Fresh Summer Quinoa Salad
serves 4-6
1 ear of corn, grilled and zipped
1/2 red bell pepper, grilled and finely diced
1 avocado, diced
1/2 cup quinoa
1 cup vegetable broth or stock
1 lime, juiced
1/4 cup chopped fresh cilantro
1/2 tsp. sea salt
optional:
1 jalapeño, finely diced
Bring the quinoa and broth or stock to a boil and reduce heat to a low simmer. Let cook about 15 minutes or until all the liquid is absorbed. Remove from heat and let cool. Mix all the ingredients in a bowl and chill.
Oh yum! What a hodge-podge of all my favorite things! Looks delicious!

This looks great–fixing it up now. On another note, not trying to be a jerk, but “stock” is spelled “stalk” in the recipe section in case you want to/can fix it. Thanks much for the recipe.
