Spicy Bean SaladWho says healthy has to be bland??  This is an easy bean salad I came up with when I didn’t have much but my staples in the house.  It’s super tasty and tasted even better the next day!  Definitely feel free to adjust the spice level to your liking 😉

Spicy Bean Salad

2 cans garbanzo beans, drained and rinsed

1 can black beans

1/2 yellow onion, chopped

1 garlic clove, chopped

a handful of cilantro, chopped (about 1/4 cup)

2 roma tomatoes, chopped

1/8-1/2 tsp. cayenne pepper

1/4 tsp. cumin

1 tbsp. white wine vinegar

salt and pepper

In a large mixing bowl, combine all the ingredients and let refrigerate an hour or two, or overnight.
