Yup, even we pizza loving vegans get a day dedicated to us! Happy National Vegan Pizza Day! In honor, I’m going to show you a step-by-step of my Balsamic Eggplant and Tomato Pizza! Enjoy!
Heat your oven to as high as it will go on bake. On a greased cookie sheet, lay out your dough. Create a layer of tomato sauce, sprinkle with roughly chopped garlic. Arrange you Japanese eggplant and roma tomatoes. Sprinkle with dry oregano. Bake for 20 minutes, remove the pizza and drizzle with balsamic glaze and add a handful of chopped basil!
I do love me some good cheesy pizza, but I think trying it with eggplant and tomato would be totally satisfying. I’ll try making it for the whole family.
