What you'll do:
Mix all the ingredients together in a bowl. In a frying pan heat up about 1/2 inch of olive oil (you can use veg if that's what you have) on medium heat. When hot, add about 1 tbsp. of the batter and fry about 1 minute on each side or until golden. Enjoy warm!
This looks like the perfect summer recipe. Can’t wait to try!
OMG – this looks awesome…
How delicious!!! I will try this soon. It’s perfect for summer, I agree. 🙂
I made these for Patrick and I last week… along with some grits (his fave) and beet salad. Delicious! A great way to use zucchini and really good as leftovers too. Thanks!
I made these last night and they were SO good.
I had to add a lot of flour… I’m not sure if my zuchinni was just reallly juicy or what but do you have to have them completely solid once you start frying them?
I just decided to wing it after a while and plopped them in the pan. still turned out amazing! 🙂
