Good morning!  For this lazy Saturday, I whipped up Chocolate Chip Pancakes!  Yummy!  This recipe is super easy, so put down the boxed mix and let's get started!!

 What you'll need: 

 1 1/2 cups Flour (white or whole wheat) 

 3 1/2 tsp. Baking Powder 

 1 tsp. Salt (kosher salt if you have it) 

 1 tbsp. Sugar 

 1 cup Milk 

 1 Egg 

 3 tbsp. Butter, melted 

 2 tsp. Vanilla Extract 

 1 tsp. Cinnamon (optional) 

 Chocolate Chips (optional) 

 What you'll do: 

Sift together the flour, baking soda and gently mix with the sugar and salt in a big bowl.  Make a well in the center of the flour mix.  Add in the milk, egg, melted butter and vanilla.  Mix.  The batter should be slightly lumpy.  Add in a handful of chocolate chips, nuts, fruit or whatever else you think might taste good!  In a heated pan, sprayed with cooking spray, drop dollops of batter in the pan.  Cook on 2-3 minutes on each side or until golden brown.  Enjoy with fresh maple syrup.
