My Great Aunt Rose has a house out in Long Island where we would go every summer to enjoy the family and the beach. These were the best trips! The whole family would get together and we'd have wonderful times out on the beach, playing games, cooking. . . All the boys would go clamming (and still do) to catch dinner. There were always a couple of dishes that we had to have out there. Baked Clams. Spaghetti and Clams and Gazpacho. Gazpacho, aside from obvious reasons, was always my favorite! It was so cool cause you could drink your vegetables! I found this concept amazing when I was a kid and still kinda do. My Aunt Rose has traveled everywhere! (I really do mean everywhere) She picked this recipe up during one of her trips to Spain. I always wait till one of the hottest days of the summer to make this cold soup to remember all the amazing times I had out there! And now I share with you and hopefully it will bring you the same kind of memories!
Gazpacho
What you’ll need:
1 large bottle of Tomato Juice
1 Cucumber, cubed
3 large tomatoes, diced
1 large zucchini, cubed
1 large sweet onion, diced
1 yellow pepper, cubed
Olive oil
Salt and Pepper
What you’ll do:
Mix it all up in a super big bowl and serve chilled! Enjoy! Now you can add lot's to this soup. You can serve it with avocado slices on top, grilled shrimp, pesto, croutons, etc.
