Carrot and Beet Salad

I hope you all enjoyed the Fourth of July weekend as much as I did!  I spent it just how I like: out on the beach with my family enjoying the sun, water and food of South Hampton.  Coming from a large Italian family, there is never a shortage of food and this trip was no exception.  Some of the culinary highlights included my (incredibly talented!) cousin Joe making homemade beer and just about the best bread I've ever tasted in my life!  It's also tradition for all the men in the family to go out clamming in the clam beds.  It's always a competition to see who comes back with the most.  Again, my cousin Joe dominated.  I think he has officially de-throned my Grandfather of being the best clammer in the family (don't tell him I told you though!)  Of course I don't eat clams, but I can appreciate the excitement over them.  They are always enjoyed three ways: raw on the half-shell, baked or linguini and clams.  

So what can I contribute to a meal of clams?  Well, I brought a whole box of vegetables from my garden and with the help of my Grandma, this is what we came up with:

0beets&carrotsThese are heirloom carrots and red and golden beets.  We gently steamed them, sliced them while still warm and tossed them with olive oil, salt and some fresh parsley.  Delish!  So easy, it seems silly to write out the recipe, but here goes:

Carrot and Beet Salad

What you'll need:

a couple beets, doesn't matter which color

a few carrots, cut into sticks

olive oil

salt

a handful of fresh parsley

What you'll do:

Steam the carrots and the beets separately.  When still firm, but fork tender, remove from the heat and drain.  While still warm, remove the skin from the beets and slice.  In a medium bowl, toss together all the ingredients and serve warm.

Glazed Carrots

Family recipes are fantastic, but they don't amount to much unless you continue to make them.  This is my Grandmother's recipe for glazed carrots.  She would make these all the time, but specifically they were always on the table when we celebrated Easter.  They really are the perfect springtime side dish.  This recipe is sooo easy and comes together really quickly.  I hope you enjoy these and find them as irresistible as I do!

Serves 4-6

What you’ll need:

2 lbs. baby carrots

¼ cup butter (or earth balance to make it vegan)

½ cup light brown sugar, firmly packed

¼ cup mustard

2 tbsp. chopped chives

What you’ll do:

Place the carrots in large pot with 1 inch water, steam till tender and drain.

In separate small pot, combine butter, sugar and mustard.  Cook on low heat stirring until dissolved.  Pour mixture over carrots and toss with chives.  Serve warm.

Carrot Soup

Everyone knows I LOVE carrot soup!  It's one of my favorite things and I can eat it by the potful.  I always eat it at Champs Elysees in Beverly Hills.  They make it so delicious!  I was a little intimidated to try and make it myself, but I have to say, it's one of my favorite things I've ever made.  I like my carrot soup to taste like carrots.  So many people try to cover that delicious carrot flavor by piling on herbs, spices and adding lots of ingredients.  I decided to try to make mine really simple.  The rich flavor from the butter, a great base from the onions, the creaminess of the potatoes really let the carrots shine.

Usually when I start working on creating a recipe, it takes a few tries to get it right, but I have to say first time out of the gate and I'm not changing a thing!  The ingredients are simple and the flavor is delish!  I hope you enjoy as much as I do : )

Carrot Soup

Serves 4

What you'll need:

1 stick of butter (real or vegan)

1 medium onion, diced

1 lb. carrots, peeled and sliced

3 medium size red potatoes, peeled and diced

5-6 cups of water

Salt to taste

What you'll do:

Melt the butter in a large pot and add in the diced onions and a pinch of salt.  Saute until the onions get pretty soft.  Add in the sliced carrots and saute until they get a little soft.  Took about 10 minutes.  Next add in the potatoes, toss together and add in 5 cups of water.  Bring to a simmer and let simmer for about 30 minute or until the potatoes are fork tender.  

Working in batches, blend the soup in the blender until smooth.  Return to the pot and season more with salt and add more water if you need to thin it out.

Enjoy with a nice warm baguette and butter : )
