What's Red and Fluffy and Cream Cheesy All Over??

If you are following the conversation on facebook, we've been talking about favorite desserts.  And well, I can't think of anything much better to talk about!  So at the request of Christine and Jane on facebook, here is my red velvet cupcake with cream cheese frosting recipe! (and don't worry, bread pudding is coming soon!):

Not much better in the world than red velvet cupcakes!  So moist, creamy, and fantastic!!  You will truly love this recipe!!  Enjoy!!

 Red Velvet Cupcakes with Cream Cheese Frosting 

makes 2 dozen regular or 4 dozen mini 

What you'll need: 

 2 ½ cups all-purpose flour 

 1 ½ cups sugar

 1 teaspoon baking soda 

 1 teaspoon kosher salt 

 4 tablespoons cocoa powder 

 1 cup vegetable oil 

 1 ½ cups buttermilk, room temperature 

 2 large eggs, room temperature 

 2 tablespoons red food coloring 

 1 teaspoon white distilled vinegar 

 2 teaspoon vanilla extract 

 Frosting: 

 8 oz. (1 package) cream cheese, softened 

 1 stick of butter, softened 

 1 teaspoon vanilla extract 

 3 cups of powdered sugar

Preheat oven to 350 degrees.  Line a cupcake pan with liners.  In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.  In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a mixer.  (careful when you first turn on.  Start on low then build up or the red dye with splash on you!)  Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.  Bake for 20 minutes. 

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth.  Add the sugar.  Beat until light and fluffy.  Frost the cupcakes when cool.

Tragedy in Oslo…

 I try to stay on topic here at lesliesarna.com, but I have to express my sorrow to the country of Norway.  I know I have readers there and I pray their family and friends are safe.  As of this morning, the death toll has risen to 92; I hope the person/people responsible for this horrific massacre are brought to justice.  My heart goes out to all in the world affected by this!

Peanut Butter and Jelly {Upgraded}

Now if any of you were vegetarians as kids, I bet you were fed thousands of peanut butter and jelly sandwiches just like I was.  Nothing wrong with a good pb & j, but after years of this snack, it can get a little tired… 

I get asked all the time, what I eat on a daily basis.  Normally it's whatever I'm posting on the blog for lunch (that way I can photograph it in the natural daylight), but I do a lot of snacking.  Popcorn, veggies, smoothies and peanut butter and jelly are my go-to snacks.

0pb&jJust by upgrading the ingredients a little I came up with a way that feels a little fresher, but with the same flavors I love.  

I use brown rice cakes instead of bread with Trader Joe's peanut butter with flax seeds and paired them with Sarabeth's strawberry and peach jam.  Yummy combo!  If you've never heard of Sarabeth's, it's amazing!  Sarabeth is not only an incredible jam maker, she also has a slew of fabulous restaurants in New York.  I used to eat at the location on Central Park South all the time.  You can get any of her products on her Sarabeth's website.

Another great idea is to put fresh fruit in your sandwich.  Bananas and or strawberries give a great kick to any sandwich.

So if you get a little tired of the same old same old, give these new ideas a try to upgrade your pb&j!

Perfect Summer Salad

I'm co-hosting one of my best girlfriends bridal shower tomorrow and I'm doing all my prep and cooking today.  I thought I'd re-post one of the salads I'm making.  It's on of my "go-to" salads for parties; everyone always loves it.  It's unique and approachable at the same time.  Enjoy!

This salad is always a huge hit anytime I serve it!  It's just plain yummy!  It has everything in it, so what's not to love?  This is great for a party or large crowd too.  

I now call this salad the "Rainbow Salad" but it's prior name was "the everything salad".  Basically because it was everything in my refrigerator one day so I decided to throw it all in a bowl and voila!  A super tasty fresh salad!

Rainbow Salad

What you'll need:

Mixed greens

1 yellow bell pepper

a few handfuls of strawberries, quartered

a few handfuls of blueberries

1 can or a few fresh mandarin oranges, segmented

1 avocado, diced

fresh mozzarella, torn (omit if making vegan)

a few handfuls of pignoli {pine} nuts

raspberry dressing {you could use store bought, but of course I like making it homemade best}

What you'll do:

I use a large shallow bowl for this simply for presentation purposes, but if you want to use a deeper bowl and toss it you can.  Toss or layer all the ingredients and top with the raspberry dressing.  Easy Peasy!

Filming in the park!

My Favorite Vegetarian 4th of July Recipes

Hopefully your weekend of fun is about to get started!  I'm spending the weekend in New York with family which means great times and lots of food!  I thought I'd share some of my favorite recipes for a weekend like this:

What's a party without homemade Guacamole!?  

You will be the most popular person at the party if you bring this mac n' cheese

How about some homemade Pizza?

Here are a ton of Salad recipes.  Perfect to bring if you are going to a party!

My favorite party sides to bring places are: Potato Salad, Corn Salad, Quinoa with Arugula and Apples, coleslaw and of course cheesy party potatoes (they are terrible for you, but it's a special occasion right?)

Of course, what's a bbq without veggie burgers??

Chocolate desserts, cookie desserts, and pie desserts : )  I especially love my Mom's apple pie recipe and this creamy fruit pie!

New Features!

My morning has consisted of being out in the garden all morning and running inside periodically to complete this new video feature.  I'm pretty excited about both.  I'd send you a picture of me in the garden, but I should have thought about it hours ago before I got all "hot" (the nice word for sweaty and ugly). : )  I can show you the 2 new features at lesliesarna.com though!

Birthday Love!

So yesterday was my birthday and I thank you all for the overwhelming amount of love and well wishes!  I spent the day relaxing by the pool with some family and close friends.  Wanted to share a pic with me and all my special friends : )
