Rockin Raw Nachos

If you’ve never had raw nachos before you probably think I’m crazy, but raw nachos are awesome!  Even if you don’t want to try these nachos, I highly recommend eating guacamole and salsa with thinly sliced jicama instead of chips.  Infinitely more nutritional and better for you!  I wish I could take credit for inventing jicama chips, but my favorite Sun Cafe offers you the options of jicama in their delicious nachos.

Raw Nachos

Serves 4-6

1 jicama peeled, halved, and thinly sliced

Salsa:

1/2 sweet onion, finely diced

6 roma tomatoes, diced

1 jalapeno, finely diced (for less heat, remove the seeds and ribs)

10-15 sprigs of cilantro, leaves, chopped

Combine all the ingredients in a bowl.

Guacamole:

1/2 sweet onion, finely diced

1 clove of garlic, finely chopped

1/2 -1 jalapeno, finely chopped

3 avocados

1/8 cup chopped cilantro

the juice of 1/2 lime

Mash avocados in a bowl and fold in the other ingredients.

“Cheeze”

1 cup of raw cashews, soaked in water for 1 hour then drained

1 garlic clove

1/8 cup chopped onions

1/4 cup nutritional yeast

1 tbsp. paprika

1 tsp. lemon juice

1- 1 1/2 cups water

Combine all the ingredients in a blender or food processor and blend until smooth.  Start with the 1 cup of water and add more if necessary.

To assemble the nachos, arrange the jicama on a plate and  layer the guacamole, then salsa, then drizzle with the “cheeze” and sprinkle with chopped green onions.  Enjoy!!

Fun in the Sun Guacamole

00001Growing up in So Cal, I eat A LOT of guacamole!!  It’s one of my favorite foods ever!  I’m always striving to create different versions of this perfect food!  Sun-dried tomatoes add a pop of sweetness to this spicy and savory guacamole.  Give it a try and let me know what you think!

Fun in the Sun Guacamole

Makes about 2 cups

What you’ll need:

1/2 yellow onion, finely diced

2 ripe avocados

1/4-1/2 cup sun-dried tomatoes (not in oil!)

a handful of cilantro, chopped

1 jalapeno, minced (with ribs and seeds if you like it spicy and take them out if you don’t)

1/8 tsp. chile lime salt (if you can’t find it, use the juice from 1/2 lime and a sprinkle of dried ground chile)

What you’ll do:

Put the diced onion in a medium bowl and sprinkle with a little salt.  (the salt will help draw some of the bitterness out of the onion.)  Peel and de-pit the avocados, dice them and add them into the onions.  Smash with the back of a fork.  Fold in the tomatoes, jalapeno and cilantro; then season with the chile lime salt to taste.

Serve with chips or for a low-fat option, serve with jicama, cucumber or celery!

New Twist on Guacamole : )

I am usually a purist when if comes to my guacamole.  You can find my basic recipe here, but I was inspired to mix it up a little recently.  Not too many changes, just the addition of some cheese (and when is cheese not the best addition!?) and some scallions for a nice fresh flavor.  I hope you enjoy as much as I do!

Don't waste the calories on tortilla chips this summer, use your favorite veggies as dippers.  Some of my favorites are cucumber, jicama, celery, carrots, peppers and tomatoes.

What you'll need:

1 avocado

1 small tomato, deseeded and diced

1 scallion, roughly chopped

a small handful of shredded mexican cheese, chopped

about a tsp. of fresh cilantro, chopped

salt to taste

What you'll do:

Smash the avocado in a bowl and mix in the rest of the ingredients.  Salt to taste. 

Enjoy!

Guacamole!

There are few things I love more in life than good guacamole!  Growing up in San Diego, it became a staple in my diet very early on.  So, without further adeu, here is the way I make guacamole:

What you'll need:

2 ripe avocados 

1/4 onion, finely minced

1/2 large ripe tomato, diced into small pieces 

a handful of cilantro, chopped

the juice of half a lime

a pinch of salt

What you'll do:

Place the meat of the avocados in a medium bowl and roughly mash with a fork.  

Add in the onion, tomato, cilantro, lime and salt.  Mix together.  

That's it!  I love serving it back in it's own skin.  It looks cute and everyone gets and individual bowl : )  

You can also get more creative, by adding cheddar cheese or roasted corn for a little something extra.
