Pumpkin Pie Frozen Yoghurt

It’s that time of year when all the food lines start making everything pumpkin flavor so I thought I’d get a jump on it and make this Pumpkin Pie Frozen Yoghurt.  I’d never made frozen yoghurt before, but how hard could it really be?  Turns out it’s not!  This recipe is so easy, so delicious, and the perfect thing to make when you have just a little bit of leftover pumpkin!  The only fault (if you can call it one) is that this dessert has to be eaten the same day you make it… with such a high water content it will freeze into a giant block if you leave it overnight.

Pumpkin Pie Frozen Yoghurt

Serves 8

What you’ll need:

18 oz. vanilla flavored coconut milk yoghurt (I used Trader Joe’s brand)

2 tbsp. canned pumpkin

1 tsp. cinnamon

1/4 tsp. nutmeg

What you’ll do:

Blend all the ingredients together in a bowl with a hand mixer.  Then either place in a ice cream maker and churn till desired texture or place the bowl of yoghurt in the freezer and stir every half hour until you’ve reached desired consistency about 4 1/2 hours.

Figs Glorious Figs

Man oh man oh man do I love figs!  It's an Italian tradition to have a fig tree in your yard.  Unfortunately I do not, but fortunately my parents do!  Every time the fruit gets ripe I high tail myself down to San Diego to eat some of their figs.  Now, I love eating these guys plain right off the tree, but I also love them broiled.  When you broil them you can serve them over salad, dessert or just about anything.  

0figLast night I cut them up, broiled them for just a second, and served them over vanilla bean ice cream.  Figs also go great with almond milk ice cream and then it becomes vegan too :)  This is one of my favorite summer desserts!  The sweet figs, the rich ice cream…. yum!  So if you need to beat the heat tonight, give these a try!

Strawberry Ice Cream

YUMMY!!!  What an incredible summer treat!! 

I adore ice cream so much!  It was always in our freezer growing up and I have memories from camp making ice cream with rock salt.  Even-though today I use my super cool kitchen aid attachment, I still think back to those days. : )

If you don't have a ice cream maker, have no fear, I recommend a couple here.

Ok, so here it is my recipe for light, delicious strawberry ice cream!

Strawberry Ice Cream

What you'll need:

2 cups whole milk

1 cup half and half

1 14 oz. can sweetened condensed milk

1/2 tsp. vanilla extract

about 10 (normal size) strawberries, pureed 

What you'll do:

In a large mixing bowl add milk, half and half, sweetened condensed milk and vanilla. Whisk together until well combined.  Add in the strawberries and whisk again.  Pour into ice cream maker and in about 30 minutes you’ll have delicious ice cream!  If you have any left, just place in an airtight container and place in the freezer.
