I LOVE Madeleine Cookies! They are some of the tastiest and easiest cookies out there! I am going to make them for a little party I'm hosting on Sunday for my friend Ivonne who make the most beautiful jewelry! I'm going to make some tasty treats and she is going to sell some jewelry; should be fun! I'll definitely include some pictures and recipes : )
If you don't have a Madeleine Pan, I like the one you can get here.
Madeleine Cookies
Makes 2 dozen
What you’ll need:
2 large eggs
2/3 cup sugar
2 ½ teaspoons vanilla extract
1 pinch salt
1 cup all purpose flour
10 tablespoons unsalted butter, melted, cooled slightly
What you’ll do:
Preheat oven to 375°F
Butter your madeleine pan
In a large bowl, using an electric mixer, beat eggs and 2/3 cup sugar in large bowl just to blend. Beat in vanilla and salt. Add flour; beat just until blended. Gradually add cooled melted butter in steady stream, beating just until blended.
Spoon 1 tablespoon of batter into each indentation in pan.
Bake until puffed and brown, about 10 minutes. Cool 5 minutes. Gently remove from pan. Repeat process, buttering the pan before each batch.
Then you can dust cookies with powdered sugar or dip them is chocolate! You could also add any kind of citrus zest to the batter to add a little bing. Enjoy!
