In honor of my good friend Carolina's birthday, I made her favorite: cheesecake with a chocolate swirl! We had a lovely evening celebrating Caro's birthday! We made a salad from Autumn's garden and linguine and eggplant rollatini, per Carolina's request! Such a good time!! Happy Birthday Carolina!!!

Here is the recipe for the cheesecake!
(this is the version to make them as bars. For Carolina's cake, I used a 9 inch spring form pan and baked for 1 hour) Either way, you'll love it!
What you’ll need:
2 cups finely crushed oreos
3 tbsp butter, melted
3 (8 oz) packages of cream cheese, softened
1 (14 oz) can of Sweetened Condensed Milk
2 tsp Vanilla Extract
4 oz of chocolate, melted
What you’ll do:
Preheat oven to 300 degrees
Line a 13 X 9 baking pan with foil
In a bowl, combine crumbs and butter and press firmly into pan
In another bowl, beat cream cheese until fluffy, gradually beat in the sweetened condensed milk until smooth. Add eggs and vanilla and mix
Pour half of the batter evenly over the cookie crumbs
Stir melted chocolate into the remaining batter, mix well. Spoon over the plain batter and using a knife, swirl the batter to make a marble like design (have fun!)
Bake for 45 to 50 minutes, Cool then Chill
