Bailey's Irish Cream Cupcakes!!

Happy St. Patrick's Day!!!  What better way to celebrate with a little Bailey's Irish cream! (cupcakes that is!)  These super moist chocolatey cupcakes are so good and the frosting is probably the best frosting ever invented! (Good luck frosting the cupcakes and not eating all of it first!)  Enjoy and have a great day!

Bailey's Irish Cream Cupcakes

What you'll need: 

Cake:

4 oz. unsweetened chocolate

1/2 cup light brown sugar, packed

1/2 cup Bailey's Irish Cream

1 stick butter (1/2 cup), room temperature

1 cup sugar

3 eggs

2 cups flour

1 tsp. baking powder

1/4 tsp. salt

2/3 cup milk

1/2 a bag of milk chocolate chips : )

Frosting:

1 stick of butter (1/2 cup), room temperature

2 Tbsp. Bailey's Irish Cream

1 box powdered sugar

What you'll do:

Preheat the oven to 350 degrees.  Melt the chocolate, brown sugar and baileys in a double boiler slowly and set aside.  Sift the flour, baking powder and salt together in a medium bowl.  Cream the butter and sugar in a Kitchen Aid or with a hand mixer.  Add the eggs one at a time. (mix in-between adding each one)  Add the milk and sifted dry ingredients alternating a little at a time.  Drizzle the chocolate mixture in and mix at the same time.  Gently fold in the chocolate chips.  Pour into a lined cupcake tray and bake for 18-20 minutes.  You know that a cake is done when you softly press your finger on top and it bounces back like a sponge.  Remove from the tray and cool on a wire rack.

For the frosting:

Beat the butter and Bailey's together and add the powdered sugar slowly and in batches.  Use a piping bag or a ziploc bag with the end snipped off to frost the cupcakes.  Enjoy!!

Yellow Cupcakes with Chocolate Frosting

  Yellow Cupcakes with Chocolate Buttercream Frosting

  **A true classic 

 Cake: 

 2 3/4 cups cake flour 

 1 1/2 cups sugar

 3 3/4 tsp. baking powder

 3/4  tsp. salt 

 12 Tbsp. unsalted butter, room temperature 

 3/4 cup milk, room temperature

 1 1/2 tsp. vanilla extract

 4 eggs, room temperature 

 Frosting: 

1/2 cup (1 stick) butter or margarine

2/3 cup Cocoa

3 cups powdered sugar

1/3 cup milk

1 teaspoon vanilla extract

Preheat oven to 350 degrees.  

Fill the cupcake pans with cupcake liners or grease cake pans (2 9×2 inch round or whatever shape you feel like) with cooking spray and line the bottoms with parchment paper or waxed paper. Sift the cake flour, sugar, baking powder and salt into a large bowl, or kitchen aid mixer bowl. Cut the butter into 1/2 inch cubes and mix them into the flour mixture on low speed.  The mix should be lumpy. Add the milk and the vanilla extract.  Mix on medium for another minute.  Add the eggs one at a time and mixing in between each addition. Pour the batter into the cupcake pan or the two pans equally. Bake 15-20 minutes for cupcakes and about 30-35 minutes for the cakes.  Let cool completely on a wire rack.  

To remove from the pans, run a butter knife around the edges and flip upside down to release each cake.  Don't forget to peel of the paper on the bottom!! 

 Now for the frosting!! Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Yummiest Cupcakes Ever!

So I've been craving sweet and salty recently so yesterday I decided to indulge myself and create a new dessert based on those two ideas.  I came up with something pretty darn yummy if I do say so!  It was perfect timing cause my friend Autumn emailed me to bring a dessert to a feng shui night.  FYI we have feng shui nights sometimes when we need to get inspired!  We bring in "the feng shui guy" Ariel Joseph Towne to lead us in our journey to making our living spaces more successful!  He is great!!  You can learn more about him and feng shui at www.thefengshuiguy.com  He will soon also have his own TV show on Syfy network!
Ok, on with the cupcakes!  I'm calling them the "yin and yang cupcakes" !  They are soooo good and easy!  You can even cheat on this one and make the cupcakes with a box mix if you are short on time.  (It's the frosting that really makes these!)  So here you go!
 

Yin and Yang Cupcakes (or Salty Caramel Chocolate Cupcakes) 

Prepare 1 box of cake mix into mini-cupcakes or here is my homemade recipe: 

 What you'll need: 

 2 cups flour 

 3/4 cup cocoa powder (hersheys is good and easy to find in your baking aisle) 

 1 1/2 tsp. baking powder 

 2 tsp. baking soda 

 1 tsp. kosher salt

 1 cup milk (try not to make it non-fat, it won't be as rich as if you use whole or part skim) 

 2 tsp. pure vanilla extract (imitation vanilla is just not as good) 

 2 cups sugar 

 1/2 cup vegetable oil 

 2 eggs, room temp 

 1 cup hot black coffee (yes, you can use flavored coffees if you like) 

 6 oz. or a half a bag of chocolate chips 

 What you'll do: 

Preheat the oven to 325 degrees and line your cupcake tin with liners.  In a large bowl sift the flour and cocoa.  Add the baking soda, baking powder and salt.  In another bowl mix the milk, vanilla, sugar, oil, and eggs with a hand mixer or in a kitchen aid.  When it's all combined, add the coffee and mix well.  Right after add the dry ingredients bowl and mix thoroughly.  The batter will be on the thinner side.  Stir in the chocolate chips and fill the cupcake liners 2/3 of the way full.  Bake for 9 minutes or until you can press on them and your finger bounces back.  DO NOT OVER BAKE!!!!  They will lose their moistness very quickly if you over bake them!
Frosting:
1 stick butter
1 cup dark brown sugar
1/3 cup heavy cream (if all you can find is whipping cream, that's fine too)
1 tbsp. vanilla
1 (16 oz.) box of powdered sugar
In a small pot on medium heat melt the butter and add the brown sugar.
 

Stir frequently until it is smooth and not grainy.  Remove from the heat and pour into a large mixing bowl.  Add the vanilla and stir.  Beat with an electric mixer; gradually add in the powdered sugar.  Frosting should be thick, but if it's too thick you can add a little more heavy cream.
 

 Assembly!
Pour the frosting into a large ziploc bag, snip the tip and frost the cupcakes.
 

Sprinkle with some kosher salt and enjoy!!!

Chocolate Molten Lava Cake

Ok, I posted this recipe in another blog, but I think it deserves it's own!  IF YOU LOVE CHOCOLATE, THIS IS GOING TO BE THE BEST THING YOU'VE EVER HAD!  This is my "go to" dessert and I can't believe I'm sharing it.  It's soooo easy!!  It's made with 6 ingredients you probably already have in your pantry!  This dessert will impress anyone you make it for!  It looks like it would take hours and it takes minutes!  So, enough talk, here it is:
Chocolate Molten Lava Cake
What you’ll need:
1 stick of butter
4 oz. Valrona Chocolate or another high end chocolate
2 eggs
2 egg yolks
¼ cup sugar
2 tbsp. sifted flour
What you’ll do:
Coat 6 ramekins with butter and cocoa. Place on a cookie sheet.
In a double broiler, melt the chocolate  and butter
In a kitchenaid or bowl, mix the eggs, yolks, and sugar
Gradually,(very slowly) mix in the chocolate
Add 2 tbsp. sifted flour
Pour into the ramekins.
Bake 7 minutes (exactly!) at 450 degrees (exactly!)
MoltenLavaCake
Remove from oven and one by one run a knife around the edges and dump over onto plate.  Accompany with vanilla bean ice cream, fresh fruit, or freshly whipped cream.

Enjoy!
You can make this a day ahead too!  Just put them in the fridge; take them out about 30 minutes before you are going to bake and bake as directed.
