Corn Bites with Cilantro Butter

Perfect to accompany my fajicos or any summer meal!  I love serving corn in small pieces.  I think it makes it so much more accessible.  I feel like people are so much more likely to eat a few small pieces rather than one big ear… maybe it's me, but I also think they are super cute when they are small!

0cornI served them with cilantro butter, which is super tasty and ridiculously easy to make!  All you have to do is bring some butter to room temperature and stir in a big handful of chopped cilantro.  Ta-dah!  Yup, that simple and your guests will be so impressed you made special butter!  Ideally, you'd like to refrigerate this after you stir in the cilantro for a couple hours.

Corn on the Cob with Dill Butter

Ah Summer!  Oh how do I love Summer!  

One of my favorite Summer foods is corn on the cob.  So sweet and delicious!  And here I pair it with on of my favorite herbs: dill!

6a012876272fb6970c0133ee25859d970b-800wiThis dill butter is ridiculously easy and so versatile!   You'll also love this stuff in baked potatoes, on toast, tossed with some veggies and whatever else you can possibly think of!

Dill Butter

What you'll need:

a pad of butter, room temperature (homemade is the best)

a handful of dill, chopped

a pinch of salt

What to do:

Blend it all together and spread on whatever sounds best!

Homemade Butter

Yeah, that's right, I said Homemade Butter!  Impressed yet?  Well, don't be too impressed, it was really really easy!  And oh my goodness is it tasty!!  So rich and creamy!!

What you'll need:

heavy cream, room temperature 

yup, one ingredient! 

But if you would like to make salted butter, you can add a big pinch of salt.

What you'll do:

Pour cream into a airtight container with plenty of room.  I used a ziploc twist lid container. 

6a012876272fb6970c01310f3c2102970c-800wiNext, shake it baby! (once this is over there will be no reason to hit the gym!)

First it will turn into whipped cream:

 Then it will turn grainy, then little balls of butter will form into a larger ball and a thin liquid will pull away:

Once you've got a solid and a liquid in the container.  By the way, it takes about 20 minutes of shaking!  Strain it through cheese cloth or a metal mesh strainer:

This is a great activity to do with your kids!  They will have a blast shaking!
