With Summer cocktail season upon us, I felt like whipping up a new “cocktail of the Summer”. I had a toooooon of mint in the backyard that I needed to pull so I thought, of course, mojitos! Then when I thought about how I could put my twist on it I grab a jalapeño from the garden and then… I saw blueberries that I had just gotten at the farmers market on the counter and voila! The blueberry adds just enough sweetness to the heat from the jalapeño and the freshness of the mint. Just use that jalapeño sparingly!! Blueberry Jalapeño Mojito
3 oz. (2 shots or more if you are in that kind of mood) Clear Rum
1 slice of jalapeño
the juice from 1 lime
8 mint leaves (plus sprigs for garnish)
2 tsp. sugar
Muddle the jalapeño, blueberries, mint, and sugar together in a cocktail shaker. Add the rum, shake well and pour into 2 glasses filled with ice. Top with club soda and garnish with mint sprig, blueberries or jalapeños.
