You have probably already made your own granola, but, have you every made granola in a frying pan? It lets you make a smaller batch and makes it extra toasty! My favorite way of eating this granola is sprinkled on top of my Sambazon Chia & Cocoa Acai Bowl.
Homemade Skillet Granola
2 cups old fashion oats
1/2 cup raw almonds, roughly chopped
1/4 cup raw pumpkin seeds
1/2 cup dried unsweetened shredded coconut
2 tsp. ground cinnamon
1/2 tsp. ground ginger
2-3 Tbsp. maple syrup
1/2 tsp. vanilla extract
2 Tbsp. coconut oil
1/2 tsp. sea salt
Heat a large frying pan on medium heat and add all the ingredients. Mix and sauté, moving the granola frequently until it is perfect golden brown. Let cool and enjoy!
Traditional oven directions:
Preheat your oven to 300 degrees. Mix all of the ingredients together in a large bowl using your hands or a wooden spoon. Toss until the mixture is coated in the oil.
Spread the mixture evenly on a baking sheet and bake for 10 minutes or until the granola is toasted. Cool fully and store in an airtight container.
