Happy Monday! I thought I'd share a typical Sunday meal for me. Basically I take whatever is in the fridge and garden and throw it in a pan and serve it over pasta, quinoa, rice or whatever I happen to have on hand. These "throw together" meals are great when you are in a rush or just don't feel like going to the store : ) You'd be surprised how many ingredients you can get into one dish.
Last night I had onion, garlic, pinenuts and pasta. From the garden I grabbed tomatoes, swiss chard, kale, beet greens, basil, and zucchini flowers. I sauteed all the veggies together and then added the cooked pasta into the pan, tossed and served.
Seriously the easiest meal ever. What are your "go to" meals?
