Creamy Fruit Pie

So, I read somewhere in a magazine about a pie made with a sugar cookie crust. . . I decided to use that idea and made a last minute pie for a 4th of July party.  Here was the result:

 It was a huge success!  What a nice warm weather dessert!  Super easy too!

Creamy Fruit Pie

What you'll need:

Crust:

Sugar cookie dough.  You can cheat here if you want and use pre-made dough, but of course I always suggest you use your own.

1 1/2 cups (3 sticks) butter, room temp

2 cups sugar

4 eggs

1 tsp. vanilla extract

5 cups flour

2 tsp. baking powder

1 tsp. salt

Filling:

8 oz. cream cheese, room temp

4 oz. creme fraiche

2 tsp. vanilla extract

a pinch of sugar

Topping:

fresh strawberries and blueberries (or whatever fruit you love)

What you'll do:

Make the cookie dough and press it into a pie pan.  Bake at 325 for 20 minutes.  Remove the crust from the oven and chill.

In a mixer or large bowl with a hand mixer, blend the filling ingredients until smooth.  Pour the filling into the center of the crust and top with chopped fruit.

Easy peasy!

    Wow! I’ve never thought about making a sugar cookie crust and it looks amazing! They are one of my favorite cookies so of course I’ll have to try using them as a crust!

    I am not having any luck finding creme fraiche :( Is it the same as Nestle table cream? Any substitute to this? It looks so good I want to make it!

    Michelle, for this recipe, I would simply use all cream cheese and don’t worry too much about the creme fraiche if you can’t find it : )

    Oh my gosh, Leslie. That looks so good!!!!! I’m going to have to try and make it (in my first trimester of kiddo #3, it’s amazing for anything to look good!) Question, when you say use all cream cheese if you can’t find creme fraiche, would you then use 12 oz cream cheese???
