So like I said, I've been a little butterscotch obsessed recently. . . I love oatmeal cookies!! You can make these with butterscotch chips, chocolate chips, raisins, dried cranberries, nuts, really anything you like. This recipe is really easy to make your own.
And I call them healthy because they do have oatmeal in them. . . right? : )
What you'll need:
1 1/4 cups flour
1 tsp. baking soda
3 tsp. cinnamon
1/2 to 1 tsp. nutmeg (depends on how much you like)
1/2 tsp. kosher salt
1 cup (2 sticks) butter, room temp.
1/2 cup sugar
1 cup packed brown sugar
2 eggs, room temp.
2 tsp. vanilla
2 1/2 cups oatmeal (quick oats)
6 oz. chocolate chips
6 oz. butterscotch chips
What you'll do:
Preheat the oven to 375 degrees
Combine the flour, baking soda, cinnamon, nutmeg, and salt in a bowl. In a stand mixer or a bowl with a hand mixer, cream the butter with the two sugars. Add the eggs one at a time and the vanilla. Gradually add the flour mixture, making sure to mix well between additions.
Fold in the oatmeal and the chips.
Drop a ball of dough onto a baking sheet about 1 tbsp. big (the size of a ping pong ball)
Bake for 7-8 minutes. Remove and let cool on a cooling rack. (or eat them how I like them, warm right away!)
